Quick & Easy Festive Oatcake with Kennedy’s Caper

Simple is best these days. My crockpot is on heavy rotation if it’s a one pot meal count me in. Once upon a time I would find complicated recipes with lots of steps and fancy ingredients almost therapeutic, today simplicity wins. I’m also back to avoiding gluten, and life (mainly my digestive system) is much better.
My friends at Hunter Foods hooked me up with some delish gluten-free goodies. I’m starting to plan my Christmas menu and wanted to make a starter that would be easy peasy but tasty. These Oat Cake Berry Crostinis are a great blend of sweet and savory and look pretty on a plate to boot. Nairn’s Oat Cakes are both gluten free and low carb. They are a great base for toppings. Their savory taste compliments the goat cheese and berries perfectly.
I topped the blackberry Oat Cake with some amazing chopped Sahale Snacks Maple Pecan Mix. Pecan, walnuts, apples, and cherries in a maple glaze! If that doesn’t scream Christmas. So yummy!
If you wanted to add a bit of extra sweetness, I included a clean option for both recipes. I highly recommend using the honey for the blackberries, as they can be a bit tart.
Strawberry Basil Cakes
Makes 12 cakes
Nairn’s Gluten free Oatcakes
1 small goat cheese log (110g) softened
1/4 cup sliced strawberries
1 teaspoon coconut sugar
1 tablespoon Balsamic Vinegar
3 large fresh Basil leaves sliced into thin strips
Directions
Combine strawberries and coconut sugar in s small bowl
Spread goat cheese evenly over oatcake.
Place berries on top of goat cheese.
Using a spoon drizzle balsamic over strawberries and goat cheese.
Top with basil for garnish
Blackberry Oat Cakes
Makes 12 cakes
Narin’s Gluten Free Oatcakes
1 small log goat cheese 110g softened.
1 tablespoon of honey
1/2 cup Blackberries (approximately 12), plus more for garnish if desired
1/4 cup roughly chopped Sahale Snack Maple Pecan Mix
Directions
Combine honey and goat cheese stir until well blended
Spread goat cheese mixture evenly over Oat Cake
Top with blackberry and Maple Pecan Mix
